Aztecs and Pulque: The Origins of Tequila

The Aztecs began fermenting the agave plant to create pulque, a milky alcoholic liquid, from 1000 B.C. through 200 A.D. At that time, pulque was created using the sap of the agave plant.  The Aztec inhabitants even worshipped two Gods that had a unique relationship to pulque. Mayahuel was the goddess of the plant, and her husband Patecatl was worshipped as a God as well. From ancient drawings that date to 200 A.D., pulque depictions are found on stone walls in the area. Years later when the Spanish invaded Mexico, pulque was transformed into the tequila that we know and love today.  

Spaniards Created Mezcal  

The fermentation process of pulque underwent a transformation when the Spanish conquistadors invaded Mexico in the 1400s and 1500s. At that time, the Spanish invaders preferred to drink brandy. However, brandy was difficult to find in North America. Therefore, they improvised using the agave plant to create tequila. Did you know that tequila is technically a type of mezcal? Tequila must be made exclusively from the blue agave plant while various types of agave plants can be used to make mezcal. During the 1500s, the Spanish government decided to open trade between Mexico and Manila. This trade agreement allowed mezcal and alcohol to be shipped around the world. Later, the largest Mexican distillery was constructed in Tequila, Jalisco in the 1600s. 

Tequila Distilleries in the 1700s

The commercial distillation of tequila started in 1758 in Mexico by the Cuervo family. Over 100 years later in 1873, the Sauza family successfully identified that the blue agave plant was the best plant to produce high-quality tequila. Half a century later in Tijuana, the first margarita was created by an Irish bar owner named Madden.  At that time, many Americans would travel down to Mexico to get alcohol during US prohibition. Tijuana had more than 100 bars in town during the 1920s. James Graham, an American journalist, and his wife stopped at Madden’s bar in Tijuana during a vacation in Mexico. Right then, Madden created the Tequila Daisy, for Graham’s wife which many believe was the first margarita.  In 1953, the first recipe for the margarita was published a few decades later in Esquire Magazine. Today, the margarita is one of the most popular drinks in the USA and around the world.

Tequila Is Important Intellectual Property 

In 1974, the Mexican government officially declared the tequila intellectual property of Mexico. By doing so, this law ensures that tequila can only be made in Mexico. As a result, other countries are prohibited from producing tequila. In addition, tequila can only be made in the state of Jalisco and a few select municipalities in the neighboring states of Tamaulipas, Guanajuato, Nayarit, and Michoacan. The Tequila Regulatory Council was also created to ensure that only high-quality tequila is produced. Remember, tequila is made from only the blue agave plant and is primarily produced in Tequila, Jalisco.
